I read somewhere long time ago that in baking industry only GMO yeast is used for a long time, because ordinary yeast is much less technological. I searched for scientific papers on the subject, but could not find any such claims. They say that GMO yeast is not used in the industry at all, but they also say that yeast is the most mature and genetically engineered organism).
