According to the information/links above - you can open account with the broker(s) - demo for pracrising or real/live for trading with real money.
All the quotes/data/stocks/symbols to trade is related to the broker.

There is no list (does not exist).
I used 'search' to find the threads of MetaQuotes about the brokers here to open demo account with them just to check the symbols/instruments they are proposing.

Ask the broker.
I think - if your account is connected with some stock exchange so it may be the real stock.

Example: Liquidity for MetaTrader 5 from Just2Trade: 9 000+ instruments on NYSE, NASDAQ, LSE and other exchanges
