Have you tried automating the setup with scripts such as python? I've been looking to do such a thing myself.

I installed several instances of MT5 with different prefixes.
Even in this case wine has not completely isolated them from each other.
Dealing with the .desktop files and have everything work perfectly (e.g. autostart) can be quite a challenge.
When it comes to updates, it completely fails to update one of the instances (of 2). The only solution is to copy the .exe file(s) after each update.
When I changed the name of the .exe file and edited some files for things to be consistent, the messyness of wine revelaed itself, scrambling all the info and resetting stuff like EA's.
