When is a freelance project considered overdue? If the customer is offline and does not confirm "Demonstration" until the deadline, will it be considered "overdue"?

Yes. It will overdue if customer keeps it open to test.

Is there any way to overcome this? Sometimes customers are too busy to check, even though I sent it to them a day in advance!

Take it easy. It's not a big deal.

You can ask the client to increase deadline.
