How up-to-date is the drawdown information presented on the 'Risks' tab of a given signal? Unless I'm missing something, I can't seem to find a way to show the date of any given drawdown data point, so am not sure how recent the data is.

Those data cannot be changed by the signal providers - just imagine what will happen if this would be passible for all signal providers, OMG ;)
You can stop the signal, close the account and open new account and a renamed signal.
Next time, maybe one should run the EA a little longer on the account first to check if the EA has been over adapted too much.
