From MT5 press F1 for Help, and search for deals.

"In" and "out" is a direction of deal relative to current position of traded symbol. For simplicity sake, it means that a deal is "in" into a trading and "out" from trading , the volume of deal will how much lot is "in" or "out", because broker may accept the deal less than requested lot - simply because there's no liquidity in market (no buyer of sell deal or no seller for buy deal).
