Why does the spread open to twice the average trend height on sundays at forex open? 

The spread opens so wide that there is no way to make even a penny unless the market suddenly had a breakout.

And, it takes up to an hour or 2 before the spread returns to a point where you can even consider entering the market.

Is it just EagleFX or is it everywhere? this is unusable at this point.

Small spread means larger volatility and more participants, large spread the opposite, on Sunday night market liquidity is very thin.

 
Most brokers with variable spread widen considerably at end of day (5 PM ET) ± 30 minutes. My GBPJPY (OANDA) shows average spread = 26 points, but average maximum spread = 134 (your broker will be similar). The charts show Bid prices only. Turn on the Ask line to see how big the spread is, Tools → Options (control+O) → charts → Show ask line.
 
Spreads usually go back to normal about an hour and 15 minutes (1hr 15min) after Sunday open. I don't trade during that time if there are any trade triggers.
